60 Days of Clean Eating Challenge – What I’m Eating?

Earlier this week I shared all about the 60 day clean eating challenge I have set for myself! Today is day 41 and I’m still going strong. I thought it would be nice to share some of the food I have been eating so that any of you who may be interested in doing the challenge for yourself have some ideas of what to eat.

Of course my challenge may be different to yours as I have allowed myself a number of different food groups that some others may not fit into the ‘clean eating’ mould and definitely not the ‘paleo’ mould.

60 day clean eating challenge - what did I eat

I’ve broken down the meals I’ve been eating into breakfasts, lunch, dinner and snacks. Hopefully some of these will help or give you ideas on what you might be able to do. Either in a clean eating challenge or just to introduce some healthier meals into your everyday life.

Breakfast
No-Grainola and Yoghurt (Either The collective company Mango pourable sunrise, or plain greek)
Fresh Summer Fruit (Plum, Nectarine, Mango)
Smoothie (Dark cocoa powder, banana, peanut butter and milk or almond milk)
Bacon and Eggs

Lunch
Chicken, rice and vegetables
Casserole with vegetables and couscous or rice
Nachos (made with homemade kumera chips)
Sushi (if eating out)
Iskender (if eating out – No bread, no tabbouleh and hummus as the sauce)

Dinner
Chicken, Rice and vegetables
Steak, egg and Kumera Chips
Green Curry with Rice
Nachos (made with homemade kumera chips)
Chicken, Soy Green Beans (I need to share this recipe, it is yum!) and corn on the cobb.

Snacks
Frooze Balls
No-Grainola with Yoghurt
Baby Food Tins (Fruit)
Fruit and Vegetable Leathers
Cashew Nuts / Peanuts
Healtheries Real Food Bars
BCAA drink
Salami and Cheese ‘sandwhiches’ (Salami is the ‘bread’)

60 day clean eating challenge

Whilst these aren’t the only things I have been eating they have been a large part of my diet. My main meals haven’t really changed at all, with the exception of breakfast as I haven’t been having protein powder, my snacks are also very similar to my ‘everyday’ foods. The difference is that I say no when offered chocolate, gum, sandwhiches, pizza etc. It mostly hasn’t been all that much of a struggle so far, with the exception of really wanting an ice cream on a nice hot day (hence making the two ingredient healthy ice blocks!), and also wanting to enjoy a nice cold Long White Vodka on occasion.

I must say with all that said I am really looking forward to having a delicious ‘cheat’ meal on my birthday! There will be some kind of cake, likely a pizza AND a vodka! Dream big, I know! For me this 60 day clean eating challenge really is a challenge for myself to prove that I can do it, and if there are health benefits like triming down a little and feeling better in my skin then all the better!
