Caramalised Sweet Potato, Apple & Bacon Hash Recipe

If you’re a sweet potato (kumara) lover and enjoy a sweet and savoury combo then you are in for a treat with this Caramalised Sweet Potato, Apple & Bacon Hash Recipe! It’s super simple to make, only requires a few ingredients (most of which you will already have at home anyway) and you can alter the recipe to suit the portion sizes you want to make easily.

This is one of the recipes in our Bootcamp 21 Day Detox Challenge (keep an eye out as I will be running this challenge online for non-bootcampers too in the future!) and it’s super delicious! This Caramalised Sweet Potato, Apple & Bacon Hash Recipe didn’t last long around here, I’ve made it twice in the past few weeks as we had some large kumara to use up (hurrah for kumara being cheap this year! Of course they are since we have some planted waiting to harvest #facepalm).

Another great thing about this Caramalised Sweet Potato, Apple & Bacon Hash Recipe is that you can use up any apples you may have that have imperfections or have been forgotten about and gone a little wrinkly, this recipe doesn’t really care! The combination of sweet from the apples and cinnamon and savoury from the bacon pairs really well with the sweet-savoury kumara taste.

Caramalised Sweet Potato, Apple & Bacon Hash Recipe

Ingredients

1 Large Kumara (any colour but I used purple – mine was almost 1kg so quite big!)
2 Medium Apples
6 rashers of streaky bacon (any bacon will work)
1 tablespoon coconut oil
1 teaspoon cinnamon

Directions
1. Peel the kumara and chop into bite sized pieces.
2. Cut the apple into bite sized pieces (I didn’t peel mine, but you could), also cut the bacon into small pieces.
3. Add the coconut oil to a hot frying pan (medium to hot heat) or wok big enough to contain all your ingredients.
4. Add the kumara, apple and bacon to the frying pan and stir to combine.
5. Tip over the cinnamon and stir through, placing a lid over the frying pan for 5 minutes.
6. Remove the cover and stir, continue to cook until the kumara and apple are nice and soft (poke with a fork to test).

Notes
If you find that the kumara and apple are sticking to the bottom of the pan just add a few tablespoons of water and continue to stir to get the bits stuck to the bottom of the pan off.
