Easy Basil Pesto Recipe

About a year ago I planted a Basil plant, he flourished for a little while and then died a very quick (and I like to think painless) death. We grieved, and then decided to give it another shot with the humble basil.

This second basil plant flourished and then flourished some more. I harvested him for a large batch of basil pesto and he continued to flourish so much so that I had to make another even bigger batch of pesto in an effort to try and tame him. 

He is still growing pretty well, however is starting to go to seed so it may almost be the end for him. I am no Basil expert though so I don’t really know what will happen to him. Since I got to do two batches of the basil pesto I thought I should share my Super Easy Basil Pesto recipes with you.

Easy Basil Pesto Recipe

Ingredients
  • 2 Cups Fresh Basil Leaves (Packed into the cup)
  • 2 Cloves Fresh Garlic (hulled)
  • 1/2 Cup Extra Virgin Olive Oil
  • 1/4 Cup Walnuts (or cashews)
  • 1/2 Cup Parmesan Cheese
Instructions
  1. Give the basil leaves a rinse to ensure you don’t have any stray critters attached to it.
  2. Put the Basil, Garlic, Walnuts and Parmesan into your food processor or blender and process.
  3. Slowly add the olive oil to the mixture and continue to process.
  4. Taste Test.
  5. Eat
 
Notes
You can freeze the pesto into an ice tray and pop out into a freezer bag once frozen. [br]You can use any nuts you like, I find the small walnut piece bags in the supermarket are the perfect size and are substantially cheaper than other nuts.[br]You can use a small teaspoon of crushed garlic if you don’t want to use fresh garlic.
