Last week I wrote about some of my tops tips to increase your vegetable consumption. I wanted to do a bit of a round up of 10 recipes to increase your vegetable consumption. Then you really don’t have any excuses to include vegetables of some description into your diet!  

I’ve done the hard yards of finding 10 different recipes for you so all you need to do is pick one or two and give them a go!

The magic of the slow cooker is that it cooks for you while you are hard at work! You can also add a tonne of vegetables to it and it doesn’t feel like your eating a plate full of vegetables. This Slow Cooker Malaysian Beef Curry served over Cauliflower Rice looks amazing! If you are not low carb I would consider adding some potatoe or kumara and maybe even some carrots too it to further help bump up the vegetable content.

  1. My hubby usually makes a big pot of soup on Sundays – tons of vegetables that he blends together. It is the best way I know to get 10 veggies in one serving!

    1. Thanks for stopping by Whitney, my advice if you are not feeling full with eating healthy foods would be to try including some more healthy fats into your diet, nuts, coconut cream and avocado are all good sources that will help keep you full 🙂
