Coconut Pancake Recipe

For a lot of 2013 after I had moved to Auckland we were having Waffles or Pancakes for breakfast once a week (remember that thing about eating in moderation 😉 – actually these aren’t too bad for you, it’s the toppings you add that can kill it but that’s another blog post all together!).

When I began testing these Coconut Products we were in the middle of doing an Elimination Diet (a future blog post) and we didn’t have flour back in our diets. Luckily coconut products were on the ‘go for it’ list as were eggs and the other ingredients.

I wasn’t too sure what to think about using coconut flour in recipe’s however now that I’ve used it a bit I quite like it. It does soak up liquid really quickly though so you use a lot less of the flour than other recipes with standard flour, you also need to increase the liquids compared to using standard flour.

Do give these a try as they are pretty tasty!

Coconut Pancake Recipe

Ingredients
1/2C Coconut Flour
1 Tablespoon Gelatine (or Agar Powder if your vegan/vegetarian)
4 Whole Eggs
1 Tablespoon Coconut Butter
1 Can Coconut Milk (Light is fine)
1 Teaspoon Vanilla Essence
1 Teaspoon Cinnamon
1 Teaspoon Sweetener (Artificial sweetener, honey, agave nectar, maple syrup – whatever tickles your fancy)

Coconut Pancake

Directions
1. Mix all ingredients together in a bowl.
2. Rest on the bench for 5 minutes to let the coconut flour soak up the liquid, if it looks too thick for pancake batter add a little more coconut milk.
3. Cook like standard pancakes, keeping them small to make them easier to handle
4. Top with Whipped Peanut Butter Topping or a topping of your choice.

Whipped Peanut Butter Topping

Ingredients
1 Tin of coconut cream left in the fridge overnight
1 Tablespoon of Peanut Butter

Directions
1. Scrap off the top layer of the cream (it should be relatively hard – don’t use the liquidy oil at the bottom, you can use this in a smoothie later ;))
2. Whip like normal cream
3. Add in PB to your liking, start with 1 tbsp (or use Powdered Peanut Butter for lower cals) and whip – put back in fridge.
4. Spread on your pancakes or eat with a spoon!

  1. With few ingredients and little handling, these turned into delicious pancakes with a nice height. Using a 1/4-cup measure, I got 7 pancakes from this recipe. Next time I will add some vanilla to boost the flavor a little, and let the batter rest for 15 minutes before cooking.
