Lemon Creamcheese Truffles [No Bake Snacks]

Summer is here and Christmas is on it’s way and I’ve got the perfect No Bake Summer Snack for you! These Lemon Cream Cheese truffles make a great snack for the Christmas table, and the best thing about them is that you don’t need to turn the oven on!

I’ve partnered with Tasti to bring you three different No Bake Summer Snacks and these Lemon Cream Cheese truffles are the first of the three recipes. I can promise you that all three recipes are not only delicious, they are super easy to make and you won’t have to turn the oven on and heat up your house further to make any of them.

Lemon Cream Cheese Truffles
These Lemon Cream Cheese truffles are the perfect treat for the Christmas table, they taste like a lemony coconut cheesecake but in ball form. They are super easy to make as you simply throw everything into your food processor and combine and then roll into the balls and hey presto, you’ve got yourself a delicious little Christmas treat! Plus you can make these as sweet or as sour as you like, you decide!

Lemon Cream Cheese Truffles
Ingredients – Makes 24 Balls

375 grams cream cheese
1/2 cup + 3 Tablespoons Tasti Ground Almonds
3 Tablespoons Honey
Juice of 3 Lemons
Rind 1 Lemon
1/2 Cup Tasti Desiccated Coconut
3 Drops yellow food coloring (optional)
Additional Desiccated coconut for rolling
Directions
1. Add all ingredients to the food processor and combine
2. Pop the mixture into the freezer for 30 minutes to harden slightly (this will make it easier to form into balls)
3. Take a large teaspoon of mixture at a time and roll into balls
4. Roll in the additional desiccated coconut and store in the fridge.

Notes
The mixture will be quite sticky, hence popping it in the freezer before rolling.
Taste test the mixture, if you like it sweeter add more honey. If you prefer a stronger lemon flavour add more lemon juice.
