Chocolate Peanut Butter Quinoa Slice

I’ll let you in on a little secret, I’d never tried Quinoa in any form until I tried making this recipe. I’m not really sure why I decided to make a Chocolate Peanut Butter Quinoa Slice but oh boy I’m glad I did!

Quinoa originates from the Andean areas of countries like Peru and Bolivia and is a grain which is gluten free and high in protein when compared with other grains like rice. Often touted as an ancient super grain quinoa is a great source of magnesium, calcium and manganese with a high level of dietary fibre.

Quinoa can be used for breakfast, lunch, dinner or for snacks like my Chocolate Peanut Butter Quinoa Slice. It is a very versatile food and I can’t wait to try making some other dishes with it.

 For my first foray into Quinoa use I decided to go with the Quinoa Puffs and make a tasty Chocolate Peanut Butter Quinoa Slice.

Ingredients
  • 1 Cup Pitted Dates
  • 1 Cup Mixed Nuts & Seeds (I used 1/4c Sunflower Seeds, Pumpkin Seeds, Hazelnuts & Almonds)
  • 1 Cup Quinoa Puffs
  • 4 Tablespoons Peanut Butter
  • 1 Tablespoons Honey (optional)
  • 125 Grams Cacao Butter
  • 2 Tablespoons Dark Cocoa Powder
Instructions
  1. Pour boiling water over the dates while you prepare the nuts and seeds.
  2. Roughly chop the nuts and larger seeds into smaller chunks.
  3. Put the dates, honey and peanut butter into your food processor and process until combined.
  4. Add the Quinoa puffs and nuts and seeds to the food processor and blitz for brief intervals until combined but the nuts and seeds are still large.
  5. Line your tray with baking paper and press the mixture into the tray and put in the freezer for 20 minutes.
  6. Melt the Cacao butter, I did this in the microwave.
  7. Add the Dark Cocoa Powder and mix thoroughly.
  8. Pour over the base and return to the freezer for another 20 minutes.
  9. Remove the whole slice from the freezer using the sides of the baking paper to pull it out of the tray.
  10. Cut and serve.
Notes
Keep stored in the fridge. You can substitute the cacao butter and dark cocoa powder for melted chocolate of your choice. You can also add some dried fruit if you wish, apricots or cranberries would go nicely. If you add dried fruit consider leaving out the honey as it will be quite sweet with both.

I taste tested the Chocolate Peanut Butter Quinoa Slice on Kyle and my dad and they both agreed that this was super tasty, my dad also went as far as to say that it’s the best thing I’ve made him so far. To which I replied that he hadn’t tried my Healthier Lemon Curd yet, but I agree that it is definitely one of the best things I’ve made before!

You can find Quinoa in the supermarkets or online, I got mine from Foodcompass. I also got the cacao butter from Food Compass as well. However you can also make your own chocolate using coconut oil and cocoa powder or even just melt down some of your favourite chocolate. I would recommend getting the darkest you can handle.

  1. Yum looks pretty tasty! Might have to give it a go. Just need to find some puffed quinoa. Google says you can pop your own but I bet it’s harder than they make out haha

    1. They are so good! I am making another batch after my powerlifting comp this weekend (had to wait till then so I don’t go over my weight class lol!). You can buy the puffed quinoa from Foodcompass only, its a little pricey but I’ve barely used any of the 150g bag, I could prob make another 5-6 batches easily out of the one bag.
