Easy Protein Cookie Recipe

It all started with a tweet, this tweet to be exact.

I was intrigued, I’ve seen plenty of recipes for ‘no added sugar’ cookies before but given they have all been American I was interested to see what a kiwi had discovered and successfully made.

After a couple of us asked for the recipe a link was passed out to a blog post by another Kiwi with an awesome name (Amanda ;)).

I hopped on over to the Here Comes the Sun Blog  and discovered the ingredients were;
2 Banana’s
1 Serving Protein powder
1 Teaspoon Cinnamon
1 Cup of Oats
Half a cup of Saltana’s

Well that sounds easy enough, all you do is mash up the banana’s and then add all the remaining ingredients to the bowl and mix together. I did have some concerns that the cookies would turn out really dry as we have made protein cookies in the past (with a higher ratio of protein powder to other ingredients mind you) and they take a good drink of water to wash them down with.

After mixing all the ingredients just pop them in the oven at 170 Celcius for up to 20 minutes – this will differ depending on your oven, I preheated mine and they were ready after 15 minutes.

I used chocolate protein powder and was pleasantly surprised at how much of a sweet treat they tasted like. I ended up making two batches over the weekend, one with chocolate protein powder and the other with cookies and cream protein powder and both were tasty. We took the second batch with us for snacks after our mountain bike ride.

You could easily make substitutions in this recipe as well as the key is the banana’s and the oats, to make them sweeter you could add a little maple syrup or honey. You could sub out the saltana’s for cranberries and even add in some nuts. Ooh how about a cranberry and pistachio protein cookie with cookies and cream protein powder?!

There you have it, a super quick and easy protein cookie for those times when you need to reach for a snack and don’t want to turn to crap food. It’s always good to have a few of these types of recipes in your repertoire.
