Lemon and Ginger Energy Bites [GF, SF]

I’ve said it a number of times before – I’m a sucker for lemon flavoured goodies! I’m actually not a huge fan of ginger so it’s surprising that I absolutely loved these Lemon and Ginger Energy Bites that I created!

I was flicking through the new Deliciously Ella everyday food recipe book and automatically slowed down over the ‘sweet’ section (as those of us with a sweet tooth inevitably do) and got all inspired to create my own bliss balls.

These Lemon and Ginger Energy Bites are vying for the lead in my ‘best bliss balls/snacks I’ve ever made’ competition and are right up there with my super easy 5 ingredient chocolate mint bliss balls.

If delicious gluten free, refined sugar free snacks which are super easy to chuck in a container in your handbag are your jam then I’d definitely give these lemon and ginger energy bites a try next time your doing some food prep.

Lemon and Ginger Energy Bites GF, SF, DF

This recipe for Lemon and Ginger Energy Bites was inspired by the new Deliciously Ella everyday recipe book! If you’re interested in creating gluten free, sugar free recipes then I’d definitely consider adding this recipe book to your collection.

Ingredients
2 Cups Cashews
1/2 Cup Sunflower Seeds
2 Cups Dried Dates
4 Teaspoons Ground Ginger
4 Tablespoons Lemon Juice

Directions
1. Soak the dates in boiling water for 5 minutes.
2. Drain the water from the dates.
3. Add all ingredients to your food processor and process until combined.
4. Roll into balls or press into a lined baking tray.
5. Store in the fridge.

Notes
If the mixture is a bit dry add a tiny bit of water to get it moving. If the mixture is a bit wet add a few more cashews or sunflower seeds.
Makes approximately 25 balls depending on the size you roll them (I used about a heaped teaspoon for each ball).

  1. These sound delicious!! I’m not a big ginger fan, but actually enjoy small amounts now and then. I do however love lemon!! (I think we have a lemon tree on orchard so will be raiding that to try these!!) I really need to start making bliss balls for snacks so I don’t get carried away and eat shit! Oxoxo
