Quick and Easy Risotto Recipe [Non-Rice!]

If anyone knows how to take a beautiful and appetising photo of risotto please do let me know! It looks like mush but I tried this out for lunch on the weekend and it was super easy to make and a relatively low calorie lunch.

Easy peasy comfort food that doesn’t take long to make plus is pretty low in calories! If you’ve got some spare calories or aren’t watching what you eat then add in a bit of grated cheese to make it nice and creamy.

The fun thing about this risotto is that it isn’t actually made from rice! It’s made from steel cut oats! Steel cut oats are different to rolled oats so please don’t try to make this with rolled oats! I made that mistake once with a crockpot overnight oats recipe and it was a D.I.S.A.S.T.E.R! Steel cut oats are cut differently to rolled oats and they have a harder texture that is a bit nutty.
Easy Risotto Recipe - Using Steel Cut Oats1

Ingredients:
200g harraways steel cut oats
500ml Campbells pre-prepared beef stock (could make your own with beef stock powder and water)
1 teaspoon garlic powder
50g grated parmesan cheese (any will do)
2 cups water
1 teaspoon extra beef stock.

Directions:
1. Add everything excluding the parmasan to a large wok or pot
2. Simmer until cooked and the water has all been sucked up by the oats.
3. If the oats are still a bit hard for your liking add some more water and cook until soft.
4. Add grated parmesan and stir through.

This made a HUGE pan full and would comfortably feed 4-5 people with some added meat and vegetables for a complete meal, even more for side dishes. I took leftovers to work for lunch and Kyle also had the leftovers as well.

We had some chicken kebabs so I pulled the meat off two of them for me and three for Kyle and stirred the cooked chicken through the portions we had for lunch then had the vegetables on the side but it would be easy enough to add them to then pan while cooking!

You could easily keep this as a vegetarian dish, or add different meat. You could also use chicken stock with chicken, I only used beef stock as we happened to have a container of beef stock from a black box we received. I’d highly recommend adding heaps of vegetables to the risotto which will make it a more balanced meal and it will also make it go further!

  2. I have literally looked up- “how to take photos of ugly food.” when I was trying to take photos of risotto before! So I feel your pain!
    These look delicious! I didn’t know you could do a risotto without rice, but I have been proven wrong. I bet my kid would love this so much!
