Strawberry & Pistachio Bliss Balls [No Bake Summer Snacks]

There is something about the Kiwi Summer and Strawberries. I’m not actually a fan of berries at all, with the exception of Strawberries, I love summer as it means that strawberries are in season and they are cheap! I’m also a BIG fan of dried strawberries, sure they may have some added sugar but they make a tasty treat for every now and again – plus you could dry your own!

I was wanting to create some new bliss ball recipes and wanted to think outside the box and come up with something completely different to anything I’ve done before. I remembered that last year I made these Strawberry and Cream Bliss Balls (which were really delicious!) using Dried Strawberries and I started wondering what other nuts might go well with strawberries and it came to me – Pistachios! Strawberry and Pistachio Bliss Balls…. sounds like heaven to me!

I LOVE pistachios but don’t buy them often because they are more pricey than other nuts and I can’t be bothered getting rid of the shells, however the handy baking packs of Raw Pistachios from Tasti are really good because they are reasonably priced and you don’t have to waste your time peeling the shells off the nuts. The great thing about this recipe is that you can make it all year round, you don’t have to wait until strawberry season.

I’ve partnered with Tasti to bring you three different No Bake Summer Snacks and these Strawberry and Pistachio Bliss Balls are the second of the three recipes. I can promise you that all three recipes are not only delicious, they are super easy to make and you won’t have to turn the oven on and heat up your house further to make any of them. Strawberry & Pistachio Bliss Balls - No Bake Summer Snacks

Strawberry & Pistachio Bliss Balls
Ingredients – Makes 12 Balls

1/2 Cup Dried Strawberries
1/2 Cup Tasti Pistachios
2 Tablespoons Coconut Oil
1/4 Cup Dried Dates (Approx 8)
1/2 Cup Tasti Cashews
1/4 Teaspoon Cinnamon
1/4 Teaspoon Nutmeg

1/4 Cup Tasti Pistachios for Rolling the Bliss Balls in.

Directions
1. Boil the jug and cover the dates with boiling water to soften.
2. Pop the 1/4 cup Pistachios for rolling in the food processor and process until it becomes a fine flour (small chunks are fine, however large chunks may not stick to the bliss balls), set aside on a plate.
3. Add all the remaining ingredients to the Food Processor including the dates (excluding the 1/4 cup of Pistachios for rolling) and combine until all broken down.
4, Roll the mixture into small balls and then roll in the pistachio crumbs.
5. Store in the fridge.
